A salon-quality, alcohol-free gel.
Salon-Quality = higher quality ingredients.
Alcohol-Free = Less drying and damaging.
American Crew Firm Hold is probably the most popular choice for men, at my salon.
No gel will ever be considered "healthy" since it is technically glue, which is hard on your hair. It can clog your scalp as well, if your not making sure to scrub and remove it when you shampoo. So make sure you don't let the product build up on your hair :)

I suggest using a brand called VitalCare it comes in a spiking/styling gel and just a normal type of gel. I have used this for a while and it works great and you can use a lot and it wont get all hard and sticky. It definitely wont damage your hair it makes it shiny and soft! Plus you can find it at your local Walmart! :)

If you don't want damage, buildup, or dy hair you need to head to the salon. I can't say which one specifically is best for you b/c I don't know anything about your hair, but what you're describing does exist at a salon. If you have a Great Clips nearby it's a good choice. Not only for their selection but b/c they guarantee satisfaction. So, if you buy, try it, and don't like it you can return or exchange it. Also, they have their own line which is less expensive.
